Here is a little experiment; get a glass of water and toss in a spoonful of Chia seeds, letting it sit for about 30 minutes. Like magic, you’ll come back to a glass filled with an almost solid gelatin, due to the soluble fiber found in Chia. Why is this important? Researchers hypothesize that this event also occurs in the stomach when the fibers are eaten. This effect allows a physical barrier between carbohydrates and digestive enzymes to occur, which slows the conversion of carbohydrates into their sugars. This quality is valuable to both diabetics and endurance athletes as it creates a longer fueling system.
Another benefit? Chia seeds are also high in protein, which can be digested and absorbed very easily. This protein use is important for both tissue and cell development.
There’s more? Yep. These little wonders also pack the unique quality of containing omega-3 fatty acids!
You can work them into your diet by stirring a tablespoon or so into your morning yogurt or smoothie, sprinkling some on your evening salad, or baking them into your muffins, cakes and brownies.
